Gee we did really bad last week for following our Meal Plan......instead of Lasanga I decided to try the manicotti recipe from Bridget...well that made enough for three meals! I also was late getting home lastenite so we cheated and had Burgers and poutine. I LOVE POUTINE!!!

So carry over meals are tuna melts and fries
Roast dinner with mashed potatoes, yorkshires and corn
Moroccan chicken rice and carrots with a curried yogurt dip
Cheese and veggie Phyllo crust pizza
Fajitas and a tomato mixed pepper salad
Sausage and cheese empanadas and salad
BBQ Steak, cauliflower with cheese sauce and roasted potatoes

Don't forget to feed our furry and feathered friends!! Heres a great recipe for birds and squirrels......its fun to make with the kids and the hours of animal watching out of our kitchen window is priceless!

Peanut butter stuffed pine cones

Get some pine cones and tie string around em so you can hang em in the trees or where ever.

1 cup chunky natural peanut butter no salt

1 1/4 cup coarse yellow corn meal

1/2 cup raisins

1/2 cup shelled peanuts

3 or 4 large pine cones and natural string or twine.

Begin by tying a length of string around the upper middle part of the cone.

Mix together all ingredients. Using your hands and a teaspoon or Popsicle stick pack the mixture into the pine cones grooves afterwards roll it in bird seed and hang some where you can watch the lil critters go wild!!

Anyway my meal plan!!!

Carry over meal is Spanakopita and pork skewers

Lasagna and salad

Steak, twice baked potatoe and cauliflower with cheese

tuna melts and fries

butter chicken rice corn

roast with yorkshire puddings and corn

pork chops and cheddar pasta with veggies

Is it me or is the life remote stuck on fast forward!! I can't believe how fast everything is going and coming!! Christmas is literally right around the corner!! HOLEY SMOKES!!! I haven't even done my PT Thank you cards yet and now I have to worry about Xmas letter and cards!! I need to get a hold of the life remote to hit PAUSE button!!!!!


Anyway my MEALS for the week!
So we didn't get to do the GOUL'ash so thats on this weeks menu!! Tomorrow nite actually!
I have a abundance of spinach so ...Spanakopita and Chicken Soulvaki
spaghetti and meat sauce tossed salad
bbq mushroom burgers and fries
Rouladen, mashed potatoes and corn
quesadillas and greek salad

Carry over meals...Meat loaf and squash and fiddle heads

Dracula's Transylvania Ghoul ash I tend to over make so this will most likely last two nites!

Pork chops in mushroom sauce with rice and carrots

I am also going to try to find the time to make Sandras Pumpkin Gingerbread Cake

Okay Dokey!!!
For Penny here is my cookie recipe you've been BEGGING for!!

Chocolate Chip Cookies

2 1/4 cup all purpose flour
1 tsp salt
1 tsp baking soda
1 cup softened butter
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 tsp vanilla extract
2 large eggs
2 cups semi sweet chocolate morsels or chunks
1 cup chopped nuts

( K... Pen the ones you liked were that wheat white flour, 1cup chocolate chips, 1 cup mint chocolate chips, 1/4 cup coconut, 1/4 cup almonds and 1/2 cup walnuts...but mix it up however you want!! its just a good base dough and stays a soft cookie)

Preheat oven to 375' In a small bowl combine flour, BS and salt. In a large bowl beat sugars, vanilla and butter until creamy. add eggs one at a time and beat well, gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tbsp onto an ungreased cookie sheet. bake 9-11 mins cool on baking sheet for 2 mins remove and VOILA!!! GET A HUGE GLASS OF MILK!!!!

So I don't know about any of you's but I am constantly trying out new recipes......Ones I find that I LOVE and know I will make a staple in our house I put onto recipe cards....these are just my no fail recipes the real goodies the ones you know you would make over and over again!! then when it comes to Meal Plan Mondays all I have to do is pull the cards I need for the week and stick em on my fridge....I know what ingredients I need to have out or buy, Doug can cook from it when hes at home and theres no searching through all my cookbooks for it or the internet for it. But like I said I only do this with the winners!! I am constantly trying out new recipes and I rarely find one that I'd add to my staple meal pile. then on weeks when I don't wanna meal plan per say...I can randomly grab 7 cards and thats it I know they won't fail me!!

So we have carry over meals again this week......

Doug wanted lasagna so instead of soft tacos we had that and it last a couple of nites.

shrimp stir fry and rice

soft tacos and salad

clam chowder

meatloaf and corn and mashed potatoes

pork chops acorn squash and carrots

curried satay with grilled acorn squash and rice (this is one of the staples)

Meat pie

Flinstone Dip .....from Jackie

1 - 8 oz cream cheese
1 - small sour cream (250 ml)
3/4 cup chopped onion
1cup chopped cooked bacon
2 cups cheddar cheese

Mix together and bake at 350 for about an hour.
Ohhhh soooo yummy!! With crackers, bread or just as is right..... Marion?!? WINK WINK!!

Okay this week!!

Perogies and tomatoe cuc salad is on the agenda cuz we didn't have that last week Penny was nice enough to invite us over for turkey soup!!

Tuna Loaf and mashed potatoes with carrots and onions

French Onion Soup, tossed salad and cheese toast for two nites!!

Thai Peanut Chicken and rice stir fry

RIBS!!!! and cauliflower....DID I SAY RIBS!!!!

Pasta and meat sauce!!!! most likely with left over salad!!

There you have it plain and simple!! Nothing fancy!!

What an AMAZING weekend I had but I'll save that for my other post!! So we were suppose to have a Gobble Gobble dinner tonite but Pen and our boys had HOCKEY PRIORITY!!!! So instead we will have that tomorrow!! So here goes!!!

Monday Turkey Dinner with all the fixings!!
Tuesday Hot Turkey Sandwiches, mashed potatoes and corn
then not sure which days will be what but.....heres the rest
Potatoe soup with sourdough bread and a toss salad
Mango Coconut Chicken and rice with carrots
BBQ Pork Chops mashed potatoes cauliflower and cheese sauce
chicken packets and rice and corn
perogies and a tomatoe & cuc salad

For all those coming to get the best Spinach salad recipe ever here you go!! I could eat the whole bowl myself with out sharing!!!

Crunchy Spinach Salad
2 quarts fresh torn spinach ( I used one bag)
2 cups fresh bean sprouts ( It was too many I halved it)
1 8 ounce can of water chestnuts ( I omitted it)
4 hard boiled eggs chopped ( I used 2 and 1/2)
6 strips of bacon cooked crisp and crumbled
1 small onion thinly sliced ( I used 2 green onions instead)

Dressing
1/2 cup brown sugar
1/2 cup veggie oil
1/3 cup vinegar
1/3 cup ketchup
1 tbsp Worcester sauce

I had this at my girlfriends T's and it was AWESOME!!!! I followed the recipe to a T the first time I made it and it was too much sprouts, onion,egg and water chestnuts( HUH maybe there wasn't ENOUGH SPINACH!!!) anyway next time I made it was with less sprouts and egg no water chestnuts and a couple of green onion instead of white onion plus I don't pour on all the dressing.
In a large bowl combine all ingredients and toss, in a jar mix the dressing cover and shake well. just before serving salad pour dressing over salad and toss! SUPER YUMMY!!!!!!!

This was the recipe requested from Gloria!!

The Banana Split Cake

2 cups Graham Wafer crumbs
1/2 cup melted butter
1 cup butter
2 cups icing sugar
2 egg
1-19 oz can crushed pineapple
2 bananas
Chocolate Syrup (easier to microwave for a few seconds )
Whipping Cream
Mix graham crumbs and 1/2 cup melted butter. Press into 9x12 pan. Bake @ 350 F for 5 minutes. Cool Cream 1 cup butter & icing sugar. Beat in eggs, one at a time. Beat well after each. Then beat 15 minutes until light & fluffy. Spread creamed mixture over graham crumb base. Add a layer of pineapple. Then slice bananas over the pineapple layer. Drizzle with chocolate syrup. Top with Whipping Cream. Sprinkle over graham cracker crumbs. Refrigerate several hours before serving.
I doubled this recipe & made the 9x12 & regular pie pan size.

Land of nod.... from Brenda (I could of eaten the whole damn thing at Pennys myself today!)

20 frozen dough rolls
1 cup brown sugar
1/4 cup vanilla instant pudding
1 to 2 tbsp cinnamon
3/4 cup raisins
1/4 to 1/2 cup melted butter

Before you go to bed. Grease a 10 inch bundt pan. Add frozen rolls sprinkle with brown sugar, pudding powder, cinnamon, raisins and pour melted butter all over. Cover with a clean damp cloth at room temp. In the A.M preheat oven to 350'F and bake for 25 mins. Let stand for 5 mins then turn over onto a serving plate and ENJOY!!

Last but not least!!
Mango Coconut Chicken...from Simply Summer by A.Tunner

4 cups cooked chicken torn or shredded ( about 3 breasts)
1/2 cup sweetened coconut
1 Tbsp fresh lemon juice
1 Tbsp Dijon mustard
3 Tbsp Major Grey mango chutney
1/2 cup plain yogurt
1/2 cup coarsely chopped Italian parsley
1/2 tsp sea salt
pepper to taste

Put shredded chicken pieces into a medium bowl.
add coconut, lemon juice, Dijon mustard, chutney and yogurt and toss until well combined. add Parsley and toss until combined. stir in salt and pepper and serve.
wow thats alot a recipes!!!! Sorry Guys I still have to get Jackies flinestone dip one but shes gone till tomorrow!! Happy Thanksgiving and GOOD EATING!!

Well this week should be interesting in our household!! I am once again going to attempt a few new recipes...lets hope I succeed at a few of'em!!

The ones I'm worried about will be the fish ones.....Doug LOVES to go fishing but doesn't like the fishy taste of some stuff when its cooked!! lets hope these ones work out cuz I miss eating fish more often cuz hes not to to fussy for it. anyway in no order

Saturday Nite...LUAU PARTY AT PENNYS!!! YEAH!!!!......I will bring an appy

Sunday nite Thanksgiving Dinner at my House...Turkey with all the fixings...including BRUSSEL SPROUTS!!! YUMMY!! and Pens making a homemade pie.....if she can get to it!! I just met her new puppy and GOSH hes soooooooooooo cute and soft but what a lil spitfire!!! I'm sure she'll post pictures soon!!

Hope everyones easter was just lovely!! Ours was very very nice... its great to have friends over when you don't have much family living close!! Think we'll be making this a tradition on all holidays ....it was wonderful having Pen and Hal!!

So this week we still have to have our shrimp stir fry and chicken fingers and fries two weeks and we still haven't got to it!! oooppps!!

Well its that time again boy the time is flying!!Not sure what happened last week but we didn't use three of our menu plans sooooooo I'll carry them over to this week cuz I already bought the stuff...could be cuz we had no power for a day of it and I went to a girlfriends for another and my hunny didn't feel like cooking for himself and i don't know why the thrid meal didn't get made, maybe we had leftovers!!

Meatloaf with Creole Sauce, White Potatoes, Asparagus

Home Made Chicken fingers and Home Made Fries

Some kind of Ribs (if Dug does'em sweet and sour sticky, if I do em may do dry seasalt and pepper ribs) and Rice and Asparagus( can you tell it was sale!!)

Pork chops, Mashed and corn

Turkey Dinner with all the fixings and Penny and Hal over too!! ( Love to have company)

left overs either hot turkey sandwhiches or turkey soup!!

Last week was great!!! this week we are trying a few new things I got from other Meal Planners!!

So first of all I wanna say I'm a day early with my shopping I did it this afternoon and its GREAT to know I don't have to go shopping tomorrow!! YEAH!!! But I will say I'm not great for buying out of my comfort zone seeing how I label myself as a NON COOKER!!!! I got a great recipe from Keleigh ( hope I spelt it right) for some cream cheese brownies( can't wait to eat those and NO I"M NOT SHARING!!!I'm feeding two you know!!)..... I had to ask the guy in bulk foods what the difference was between wafers and the other stuff they were both DARK CHOCOLATE!!! Needless to say he wasn't much help so I choose the more expensive stuff.... thats what I do when I'm in doubt!!! Then I'm trying someones Empanadas recipe ( I linked on a link from Annie's site) So she suggested Pillsbury dough grands.... so thats what I put in my cart!! I get to the till and they are Cinnamon bun thingies.....so now I'm confused...I go back to aisle they sell them in and all the Grands are Cinnamon buns..... does that mean the dough is flavoured or do you add stuff to it??? So I bought one of those to see and 2 of the croissant ones just in case!!! I need a shop line hot line for all my culinary shopping dilemmas!! ON SPEED DIAL ON MY CELL PHONE!!!! So lets hope all goes well this week!!

Oh yeah forgot to say I tried a radish avocado salad last nite and my 19 month old LOVED IT!! Shes never eaten the lettuce before..... but she likes stuff with TANG and this had some punch she ate a whole bowlful ... Mommie could only have a small bowl it was good but too much.... I've never been an AVOCADO lover!! unless its guacamole!! But I'm trying!!!


Leafy Avocado and Radish Salad
Ingredients

2 tbsp (25 mL) extra-virgin olive oil

1 tbsp (15 mL) grated lime or lemon rind

2 tbsp (25 mL) lime or lemon juice

1/4 tsp (1 mL) each salt and pepper

6 cups (1.5 L) chopped leaf lettuce

1 avocado, peeled and cubed

1/3 cup (75 mL) each grated radish and sliced red onion
Preparation
In bowl, whisk together olive oil, lime or lemon rind, lime or lemon juice, salt and pepper. Toss with lettuce, avocado, radish and red onion.

And not to sure what to have for our 7th meal we may eat out but first I'll peek over at Pennys and if shes having something different and good MAYBE WILL POP IN THERE AGAIN!!!! LOL just joking Pen!!

This weeks main courses are just nice and easy!!! Still trying to finish Kali's new room!! Lots of painting and moving stuff over and sorting and well...you get the picture!!

Hope every ones meals went well last week!! We didn't fondue cuz we ended up with a leftover night...so maybe next week and maybe we'll do a potluck one if Jen & Scott and Pen & Hal are available!! I'll have to put it out there to them first!!























So here was my raspberry fool for love dessert I made my hunny for Valentines Day.....very filling.....full of love that's why!! Yes, yes I'm Miss Cheese Ball!!

Anyway our weeks menu in no particular order.....

French toast nite!!!! We love this every once and a bit!!

Lets just start out with last weeks menu had me attempting to make crepes!!! And I'm happy to report that they turned out AWESOME.....it only took me from 2pm to 6pm to make em!!!! Doug was laughing HUGE at me...I took a picture of my wonderful creation ( Jenny's idea..thanks) I forgot to take one of the Herbed Chicken and Mushroom crepes...But I did remember come dessert time. I told him I was gonna blog the picture and he asked me if I was gonna blog that I spent 12 hours making em I told him no I'm not sharing that part with everyone he said he was gonna start his own blog and tell the world about my cooking adventures!!
or misadventures!!! So here's the pictures of my Caramelized Apple Crepes!! YUMMY!!!
















So on the Menu this week is in no particular order!!!

Perogies and salad

Orzo with garlic and ginger veggies

meatloaf and mashed potatoes with corn

homemade pizza

fondue!!!! one of ours favorites!!! I was gonna do it for Valentines dinner but Dougs nites so we're gonna do it on his days off

homemade chicken fingers with a honey mustard sauce and salad

and for Valentines Dinner Steak and Baked potatoe with brussels and for dessert "Raspberry Fool for Love" dessert the recipes out of the Canadian Living magazine...feb 2007


1/4 cup individually quick frozen(IQF) ( what ever that means...I bought fresh) or fresh raspberries

1 tsp icing sugar

1 oz white chocolate chopped

1 Tbsp sour cream

1 Tbsp granulated sugar

dash of vanilla

1/2 cup whipping cream


~reserve 2-3 berries on a paper towel lined plate for garnish. press remaining berries through a fine sieve set over a bowl, discard seeds. stir in icing sugar set aside

~in bowl over saucepan of hot ( not boiling) water melt white chocolate, let cool slightly. in separate bowl whisk together sour cream, granulated sugar and vanilla whisk into white chocolate

~ in separate bowl whip cream(I'm cheating and using cool whip) fold 1/4 into chocolate mixture. fold in reaming whipped cream. Add raspberry sauce, swirl just until streaky. spoon into serving dish cover and refrigerate for two hours garnish with reserved raspberries.....makes 2 servings!!!
Thought I'd share one of Dougs favorite stories of my cooking misadventures.........
He and I were in the local furniture store looking for a new stove/oven the salesman starts asking me all these questions about what kind of oven do I want and Yadda Yadda...I said talk to HIM and pointed to Doug!! Doug really wants a convection oven so he relays that to the salesman then asks the salesman if this particular oven would cook cardboard evenly??? The clerk looked at him abit dumbfounded and Doug pipes up, laughs and tells the clerk how the night before I put in a frozen pizza in the oven with the cardboard still under it and was wondering if this stove would of cook the cardboard evenly!!

I can't believe its meal plan Monday ..Already!! boy that week went QUICK!!! The good thing is that my meals last week lasted longer than I thought they would Cabbage rolls was two days....stew was two days... so anyway
tonite is Garlic roasted chicken, smashed potatoes and green beans
honey mustard pork chops with rice and corn
ribs...sticky good kind!!!
spaghetti and meatballs
I'm gonna attempt crepes.....wish me luck!!!!

though I always meal plan something else... Dug and I end up eating out once a week cuz we end up in Terrace and its late and soooooooooo we splurge!!!
